Thanks!! Great to see ya! And..we REALLy appreciate the prayers.

Its beena tough road this past year with all this going on but weve had our lil guy now for a year and just had our 1 st Christmas together which was really great. Daughter is getting sentenced Jan 28 but it looks klike 4 yrs for her. I hate drugs and what they do to people!! Angry

 Aww BB it's nothing really..its just family and we gotta do what we can to make sure he's gettinga good a  home life as possible  ya know. God bless the little guy. he really is great and none of this nonsense is his fault.. and Ty thanks again for all the words and encouragement bud.

WOW>. I was thinking we were picking up steam, and we had some extra traffic here on the site...
After looking over most of the "active" post.. I see there is no more than a dozen people making what posts are put up....
I'm sure we have a few 'lurkers'.. but if they don't post.. there's nothing to discuss
Gee.. whiz....  Maybe when the racing kicks off we'll get some new blood, or some of the old folks will come back...

FS.. you folks do a great job.. nice site.  Shame to see such little use on it.

Not much to comment on really. Sure NASCAR has announced a possible change to the points system but we don't know the details as of yet. The worse change, so far, is to the Shootout, adding ROTY. Too many ways to get into that race, soon there will be nothing special about this great non points race.
Today, we will actually get to see cars on the track. Those cars in motion should give us something to talk about. Meanwhile, for me personally, I don't find it necessary to comment on every little pip and squeek.

I think things will pick up as Daytona draws near.  It's actually been a quiet Silly Season as far as major driver moves, that was pretty much settled once Kahne's plans were announced.  People seem to get less excited about sponsor or rule changes, in fact I think they've really totally burned out on the rules tinkering.

Well just plan on making some homemade sausage this weekend . Bought a pork shoulder and butt roast and plan on smoking 20 lbs of hickory pork shoulder and grinding and pressing about 40 lbs of link sausage this evening .  Probably will start off the season eagerly awaiting the 24 hrs of Daytona . Hope everyone is having good health and enjoyment within the New Yr .  All the Best Dudes & Dudettes  Wink

Well actually made closer to 60 pounds , my hunting buddy dropped over to help and brought another 20 lbs with him for Smoking . He used Mesquite and Yes it turned out rather well . I still use a little onion and garlic powder but not much perhaps a table spoon per pound . Started about noon and had it all pressed and wrapped by five . Then it was Beer and Sausage testing Time lol .  Wink

P.S. I have about 25 lbs of  Ground Moose Sausage to smoke this weekend , keeps the Ole Hunter senses keen during the off season.I think I will try some apple / cherry and wine this season , will let you know how it turns out ..love experimenting . I usually use a small cast iron frying pan to sample prior committing the entire batch to a trial and error session lol .

Ty Ol bud THAT sounds GREAT! WOW! id love to try Moose sausage just once anyways.

Im thinking this site will pick up again naxt month. Im hoping anyhow.ZIt sure can get fun in here and Id liove to see it again. Im really looking forward to this season for once ina VERY long time. Cool

Yeah Blu actually just got back in this about a hour ago from finishing up the last 10 lbs of Moose Meat Grinding . I had previously made it with garlic and some hot bell peppers , but it was just a little too Italian flavoured for me .
So I reground it with a little beef fat and red wine . I used the small #12 hand grinder and stuffer rather then bring out the commercial (electric) grinder & stuffer combination unit , since I only had a small batch . I was surprised at the outcome much less over powering . I wish I could send the stuff via Xpress mail lol , I always make to much and end up giving some away in the New Year .  I vacuum pac as much as I can but even the the Garage deep freeze is max'd out .

P.S. If you ever get a chance at Caribou ...kill for it ! My Buddy dropped over last week and brought 5 lbs of burger and 2 steaks for sampling ...yowza ..had been over 5 yrs since I had had any , has to be the most moist and tender wild game I have ever sampled . I have plans on heading to Quebec for a 3 day hunt perhaps the yr after next , when the Mortgage is paid off .  What a Mortgage Burning Party that should be Caribou Roasts and Labatts Blue lol .  Wink
